


Think of Bar Chouette as a modernized continuation of Mélo and Ly’s previous work as executive chef at Hotel Arts. Ly tried his hand at his own French place a few years ago with the charming little Mélo Eatery, but it was unable to get its footing before being pummeled by the pandemic. Rachel Yu, general manager, and operating partner and Duncan Ly, chef-owner at Bar Chouette, in Calgary’s Beltline. The long open kitchen bar at the back of the 46-seat room and other structural features are still there, but the décor is less earthy, with bright pops of colour and playful artwork. Miraculously, he transformed the restaurant space in a matter of months with a little paint and some new furniture.

Initially, Fire and Flora’s owner asked Ly to resurrect the vegetarian restaurant after the departure of its original chef, but Ly decided he’d rather use the room for a little cocktail bar he’d been dreaming of for a while.
